If you've ever seen foamcore used to make architectural models, it's
done the other way. You cut part-way through from the back, so the
face sheet is continuous on the outside of the fold. That way,
there's no gap. It's better if you have a cutter that takes out a
triangular section along the cut, so the mitered edges fit after the
fold. Then, you'll usually see the model-maker run a light bead of
hot-melt glue down the gap, fold the foam-core, and hold it for a few
seconds for the glue to set.
If I had to set up what you're suggesting, I'd probably set it up so
that it could be stored flat, and folded/taped into the triangle when
needed for the display. I'd consider using coreplast as the
substrate, because it would almost certainly hold up better than foam-
core.
