Of course they can put that on their web site. However, if you
printed the words "printed on FSC-certified paper," their argument
would have to center on trademark violation (which might hold if they
have trademarked the phrase "FSC-certified," even if you haven't
printed the logo), or on accuracy (which might hold if the paper is
no longer FSC-certified once it enters your shop and the "chain of
custody" is broken.
It seems to me that your presentation to your customer would have to
be more along the lines of what we do when someone asks us about soy
inks (which is to point out that all of our inks are vegetable-oil
based, even though linseed oil is not soil oil). If they insist on
FSC certification, and countering with information about your
superior environmental-consciousness program doesn't work, you might
be stuck...
